London may be well known for its craft beer but what about craft sake? Tucked away in a microbrewery in Peckham in south east London is Kanpai London Craft Sake, London’s first sake brewery. Fuelled by their shared love of sake, Japanese rice wine, Tom and Lucy have been hard at work to make craft sake mainstream. ‘Kanpai!’ in Japanese literally translates to ‘dry your cup’, which you certainly should with sake.
I was fortunate enough to catch up with Tom and Lucy at Hyper Japan (shortly before closing time, after they’d had their fill at the sake tasting experience for ‘research purposes’ of course).
